Served with purple onion salad in vinegar and fresh bread.

Duck liver nibbles braised in their own grease, served in a small pot with fresh bread and purple onion salad in vinegar.

Served with soft and tender goose meat, vegetables and small noodles.

Parfumed with a few drops of pumpkin seed oil from Őrség and sprinkled with toasted pumpkin seeds.

MAIN COURSES FROM GOOSE:

 CASSOULET, BAKED IN IRON POT (LF)
With stuffed gooseneck, pearl barley and hard-boiled egg.

BREAST OF GOOSE IN HUNGER’S SAUCE
Braised in a piquant marinade with lots of vegetables. From the vegetables we prepare hunter’s sauce. Served with sour cream and grilled slices of freshly-shot dumplings.

GOOSE LIVER POT WITH RICE AND VEGETABLES (LF, GF)
Vegetables were braised in goose broth, gooze gizzard and meat, then seared on onion and finally mixed with mushroom flavoured steamed rice. Served with steamed red cabbage and stewed apple with saffron. Finally, the goose liver pot crowned with a slice of grilled duck liver.
